Eddie's Recipes - Eggplant-Zucchini Medley
Serves 4
Ingredients
1 eggplant, peeled and diced
3 zucchini, sliced
2 green peppers, diced
1 onion, sliced thin
2 large clove garlic, minced
2 large tomatoes cut into 1/2 inch strips
1/2 teaspoon oregano
1/4 teaspoon pepper
Method
- Combine all ingredients into large, heavy pot
- Cook, cover for 20 mins over a low heat
- Uncover and cook for 15 minutes over moderate heat, stirring occasionally to prevent burning
