Eddie's Recipes - Broccoli Boufant
Serves 4
Ingredients
1 small onion chopped
Water
1 x 10 ounce package of broccoli, cooked
12 egg whites, beaten stiff
1/2 teaspoon garlic powder
Dash of pepper
1/2 cup of skimmed milk
1/2 cup of grated Parmesan cheese
Method
- Simmer onions in ½ inch water in a nonstick skillet
- Cover onions with broccoli
- Combine stiffly beaten egg whites with garlic powder and pepper
- Add milk and beat again
- Pour mixture over broccoli and onions and stir. Cook over medium heat for 5 minutes
- Sprinkle with Parmesan cheese. Cook another 5 minutes over medium heat
- Cut into wedges
- Serve immediately
