Eddie's Recipes - Broccoli Boufant

Serves 4

Ingredients
1 small onion chopped
Water
1 x 10 ounce package of broccoli, cooked
12 egg whites, beaten stiff
1/2 teaspoon garlic powder
Dash of pepper
1/2 cup of skimmed milk
1/2 cup of grated Parmesan cheese

Method

  1. Simmer onions in ½ inch water in a nonstick skillet
  2. Cover onions with broccoli
  3. Combine stiffly beaten egg whites with garlic powder and pepper
  4. Add milk and beat again
  5. Pour mixture over broccoli and onions and stir. Cook over medium heat for 5 minutes
  6. Sprinkle with Parmesan cheese. Cook another 5 minutes over medium heat
  7. Cut into wedges
  8. Serve immediately
